Pigs in Blankets

Here in the UK we've got two types of sausage rolls. There are the golden, divine, melt-in-your-mouth party nibbles – and there's the greasy, stale, tasteless and mysteriously coloured sold-in-the-garage-snack. In other words, there's the homemade version, and there's the store-bought version. Both versions are as British as British food can get.    

If you're new to English food, a sausage roll is sausage meat wrapped in pastry, eggwashed and baked in the oven until it's puffed up and attained a tempting golden colour. They can be made either with shortcrust or puff pastry and if you feel experimental you can easily mix your own spices and fresh herbs into the sausage meat. This basic recipe is as easy as it gets – yet a gorgeous English classic for Christmas.

English Sausage Rolls
10 rolls

1 batch shortcrust pastry (click here for recipe)
450 g raw sausages

1 egg + 1 tbsp water for eggwash
Poppy or sesamy seeds

  1. On a floured surface, roll the pastry into a long roll about 28 inches (70 cm) long.
  2. Flatten it out and use a rolling pin to create a rectangle about 32x6 inches (80x15 cm).
  3. Squeeze the meat out of the sausages and shape it into a long row on top of the pastry. The meat should be placed one third (or 2-3 inches) from the edge.
  4. Eggwash the edge and fold the pastry tightly over the meat. Roll the edges up and create a diagonal pattern using a toothpic.
  5. Cut the roll in 10 pieces. Place them on trays.
  6. Use a sharp knife to make decorative cuts on top of the rolls. Brush generously with eggwash and sprinkle with seeds.
  7. Bake in 180 °C for 25-30 minutes.

Storage: Stored in the fridge, sausage rolls will be good for 4-5 days. They also freeze well.
